One kitchen, several regional traditions

"Chinese food" is not one cuisine. Our menu draws on the traditions that travel best.

Sichuan brings the numbing-hot dishes — Mapo Tofu, Twice Cooked Pork, Boiled Chicken in chilli oil, Prawn Sichuan Style. Cantonese brings restraint: whole fish steamed with ginger and scallion, greens in oyster sauce, clear soups. Northern cooking gives us the hand-pulled noodles and dumplings.

Then there is the hot pot — 33 items of it — which is less a dish than an evening.

How to order well

Chinese meals are built for sharing, and the trick is balance rather than volume. A good rule for a table: one dish per person plus one, chosen so the textures and intensities differ.

Aim for one braised or saucy dish, one dry-fried, one steamed or clear, and one vegetable. Add rice to soak up sauces, and a soup if the table is four or more. Order a whole fish if you want a centrepiece.

If a table is six or more, hot pot is usually the better call — everyone cooks at their own pace and the meal lasts.

Large tables served together, with dishes pre-ordered so nobody waits. Common for groups arriving into Pokhara from Kathmandu.

How big is the menu?

228 dishes across 24 sections. Twelve chicken, fifteen pork, thirteen seafood and fish, six buff, four mutton, four duck, 29 vegetable mains, 19 vegetable snacks, 19 non-vegetarian snacks, plus rice and noodles, eleven soups, a 33-item hot pot menu and a full drinks list.

What should I order if it is my first visit?

A good table of four: one chicken dish (Chicken with Cashew Nuts), one pork (Twice Cooked Pork), one vegetable (Braised Eggplant or Mapo Tofu), plus rice and a soup to share. If you want one showpiece, make it a whole steamed fish.

What is on the hot pot menu?

Four bases — Chicken Hotpot in big or small, Chilly Sauce Hotpot, and Beer Duck Hotpot — then you build the table from 27 add-ins: sliced chicken, pork, buff and mutton, meatballs, prawn, squid, fish, tofu, mushrooms, lotus root, cabbage, noodles and dumplings. Garlic or peanut dipping sauce per person.

Is there much for vegetarians?

Yes — 48 dishes in total. The vegetable section alone runs to 29 items, from Mapo Tofu and Braised Eggplant to Dry-Fried Green Beans, Broccoli in Oyster Sauce and Water Spinach with garlic.

Do you serve seafood in a landlocked country?

We do, and we are careful about it. Thirteen seafood and fish dishes including whole steamed fish, prawns done four ways, and squid. Stock is bought in to order rather than held, which is why some items are seasonal.

What are the busiest times?
